What is Caldillo de Congrio?

originating from a South American country in Chile, Caldillo de Congrio is an eel food. Caldillo de Congrio, translated from Spanish into English, means "broth Conger" or Conger Chowder. The food is named after its main component, an eel called Conger. The subcategory, the garden eel, lives in colonies and protrudes from seawater as plants. Garden eels are very difficult to catch when they retreat to the dwellings in the shape of a hole in the sight of man. However, some other Conger eels are easier to come, one of which is Congio Colorado or Red Conger. This type of eel usually occurs in the Pacific Ocean that surrounds or touches the coast of Chile known as the Chilean Sea, and it is the order of fish used to prepare Caldillo de Congrio.In a pot of water producing broth. Meanwhile, vegetable or olive oil is heated in the pot. Then chopped onions, garlic, jalapeno or peppers, tomatoes and carrots add and roast until all items are soft. The mixture is flavored with salt and black pepper.

After about five to 10 minutes of cooking at moderate fire, the broth is added to the roasted objects. After another 10 to 20 minutes, the boiled eel is added and the heat is reduced to allow the content to cook approximately five minutes. During this time the cream can be mixed. When it is done, Caldillo de Congrio is usually decorated with parsley, coriander or leeks. The soup is traditionally consumed with pieces of crispy bread and some wine.

There are certain variations of Caldillo de Congrio, mainly based on cook preferences or preparation. Some people decide to buy broth and cook the eel with steuty ingredients and many recipes include shrimp or potatoes. In places where the eels are inaccessible, people replaces Conger with other types of fish such as Whiting. In popular culture, Caldillo de Congrio is best known for being the subject of the poem Oda al Caldillo de Congrio or from on Caldillo de Congrio . It was written by the celebrated Chilean poet Pabl Nerud, who won the Nobel Prize in Literature in 1971.
