What is Marengo chicken?

Chicken Marengo is a classic Italian Entrée that has roots that can be traced until the 19th century. Its original ingredients traditionally included chicken, tomatoes, onions, mushrooms and garlic along with herbs, olive oil, crayfish and eggs. It was usually served with bread, potatoes or other starch.

Many historical accounts say that popular food was named after the Battle of Marenga, a city in the Piedmont area in northern Italy, in which Napoleon Bonaparte led its troops to win over June 1400. Since the Austrians took enemy food during the conflict, Dunand was heavily found to find ingredients for food. Dunand explored the ravaged city to create the right and filler winning food to serve his boss. He gathered the above -mentioned food from local farmers and began to create food for Napoleon.

According to the stories of the origin of the Dunand bowl, he roasted cut chicken in olive oil until it was roasted. He then made a tomato sauce, onion, garlic, mushrooms and herbs, added it to the chicken and cooked them together until they were tender and got married. Some accounts say Dunand has added a spray cognac from Napoleon's flask to the mixture. He decorated the bowl with roasted crayfish and fried egg and served him Napoleon. Dunand reportedly included a soldier biscuit with food.

As the story is told, Napoleon was delighted with a bowl and immediately called him Chicken Marengo. Because he was reportedly quite superstitinaPoleon Oous and Gluttonous ordered Dunand to prepare the same meal for each battle. He was sure that this announcement of ritual food would ensure a repeated victory.

Today's version of Chicken Marengo follows the original recipe quite closely. However, wine often replaces cognac in the list of ingredients. A large number of modern recipes for chicken Marengo also requires a slight amount of chopped fresh herbs and black olives just before serving. Fried eggs and crawl are usually optional. Recommended accompaniment often include a slice of abundant French bread or potato side dish.
