What is chilorio?

Like carnitas, chilorio is a type of fried, drawn pork pork cooked in chili sauce. It comes from the Mexican state of Sinaloa and is this meal for at least 300 years and was first created as a way to preserve meat. In modern times it is often used as a filling for Enchiladas or Tacos. It can also be administered as a main course, usually with the side of beans, salsa or guacamole.

chilorio usually uses boned pork or shoulder for its meat. White wine and vinegar or vegetable broth are usually used to cook pork. A mixture of orange juice and water can also be used. For frying meat or sauce is also needed fat or bacon lard, but vegetable oil may be replaced. Lard, however, provides a bowl of another aroma, so while vegetable oil can be a healthier choice, this advantage occurs at the cost of some taste.

Alternatively, chili sauce, rather than pork, cooked in oil or betches. The meat, along with a small broth, is then added and mixed with the sauce. Salt is often added to taste at the end of the cooking process.
