What is evaporated milk?

The evaporated milk comes in a canned form and evaporates due to the process of removing water from the milk. It is much stronger than ordinary milk that you would buy in a grocery store. This milk storage method has become popular because milk cans could keep much longer than fresh milk and did not require cooling until they were opened. About 60% of the water is removed from evaporated milk, which represents its thickness.
