What is Fleischnack?
Fleischnacka is a traditional food from the French area of Alsace. It is a spicy pastry consisting of ground beef flavored with various herbs and rolled in a noodle body. After cooking, Fleischnack resembles a spiral. It is one of many meals known as the Alsat's cuisine and reflects the Germanic roots of the province.
Alsasce is located in eastern France, adjacent to Germany and Switzerland. Before becoming part of France, the region was regularly under the German government. This cultural influence can be seen throughout Alsace, including the Province's kitchen. Many dishes such as fleischnacka, have an apparent origin in non-French culture, which is evident in the etymology of their names.
The basis of the recipe and fleischnacka is dough and beef. Beef is grounded and flavored with various spices and herbs, according to preferences, which often include nutmeg, onion, garlic, salt, pepper and Herbes de Provence. Herbesde Provence are the original of OBlast and are usually a mixture of thyme, basil and fennel. Eggs are also often added to the fleischnack flesh to keep the mixture together during the cooking process.
Dough for fleischnacka is simple and consists of flour, eggs, salt and water. The dough can rise before adding meat. After the dough rises, rolling until it is thin and to a rectangular shape to which the meat spreads. The dough is then inverted and cut into thick slices. The slices are boiled into a liquid that sometimes contains white wine for approximately 20 minutes, or until the meat is boiled.
This meal is one of many that traditionally consumes in Alsace, many with Germanic influences. BaeckeOffe is one such food that consists of meat, potatoes and other vegetables roasted in a pot. Large, soft preclists, known as Bretzels, and cabbage are common in Alsaska in their origin. Tarte Flambée, , which resembles pizza on a thin crust, is known as Flammekueche in Alsace and is often ended with onion, cream and bacon. Other Alsat's meals, which are usually considered to be German fare, are spaetzle, beer, such as soup and Bredele, , which are small cookies traditionally produced around the holidays.
