What is boerewors?
Boerewors is a traditional South African sausage that was originally created by Dutch settlers using available meat and spices. The name of food literally means "agricultural sausage" and often made by farmers from the animals they raised. The original recipes for Boerewors used beef, pork and sometimes lamb mixed with spices and fat and then stuffed into pork cases. The sausage is intended for use and cooking, while fresh and does not age well, unlike a similar variety known as drowors , which is dried. In readiness, sausage is usually grilled and can be served as a picnic meal or is included in a common bowl of corn flour porridge. When the popularity of sausage began to spread, the diversity of meat, which was used and began to include more exotic varieties of local wildlife, such as ostrich. In the middle of the 20th century, some of the producers began to use cheaper types of meat, including by -products, crumbs and other fillers. Authentic boerewors is almostcompletely meat. One of the final ingredients that is mixed with roughly sliced meat is the species, which is basically sliced pork or beef fat, although many recipes actually require pieces of chopped bacon instead.
meat in boerewors is complemented by various spices. The exact amounts are usually developed by the sausage manufacturer and in some situations they are maintained so close to family secrets. Generally used spice seeds of coriander, nutmeg, spices, cloves and thyme. They can be added raw to the mixture or can be baked first to cause a different taste.
When Boerewors began to be produced commercially, non -traditional ingredients were introduced. These were items such as cheese, garlic, tomato sauce and chicken. Although these varieties are still sold, they are generally not considered to be real versions of sausage.
To become a real sausage, the ingredients are onchopped, combined and filled inside the pork case. The most common shape for Boerewors is a very long, continuous coil. It is not aged like some sausages and must be cooled to prevent spoil.
Completed boerewors is usually grilled or fried. It can be administered on a role with onion or in itself other vegetables. One classic meal uses a sliced and mixed sausage with a very coarse corn porridge called pap , which is similar to Italian polenta.
