What are harees?
Harees is a traditional food in Arab cuisine, served throughout the Middle East. It is a mixture of dried wheat core and meat, cooked together until they are soft enough to whip into a pudding of a similar texture. Harees preparation is a lengthy process and food is usually reserved for special occasions. It is particularly associated with celebrations such as Eid, Ramadan and weddings. In this bowl, dried whole cores of hard red wheat are used. Sometimes it is called pearl wheat. Beef is a common choice for hare, but mutton or veal can replace beef. Hares can also be made with chicken. For this meal, slender meat cuts are usually recommended.
Preparation can be time consuming, but the usual process is not complicated. Clean, washed wheat is brought to a boil in salted water and is allowed to cook briefly. Then the meat or chicken is added to the pot and both cook for at least two to three hours, or until they lose their own.
When a boiled mixture is very soft, it isremoved from heat and mixed together. Traditionally, this happened with a specialized wooden beater called Medhrab . Many recipes simply require the use of a large spoon. A submersible blender or a kitchen robot can also be used.
Traditionally, the hares were cooked on the stove for a long time, then placed in a brick oven or cooking for several hours, in the same cooking. Today, the pressure cooker is sometimes used to achieve many of the same results as other methods in part of time. Regardless of the cooking method, it is important to ensure that there is enough water in the pot for wheat and meat to dry or burn.
There are many variations in the spice for hare. Cardamom pods are often used, as well as onions, black pepper and garlic. Some recipes require additional and small legumes called pulses. Frequent accessories are also cumin, turmeric and cinnamon. Some recipes require adding sugar to Smonth when they cook.
Harees is often served in a large bowl of icing samen , a cleaned butter product that is widely used in cooking in the Middle East. You can also use ghee or simply melted butter. In some regions, it is common to supplement the hare with sugar or a mixture of sugar and cinnamon.
