What is Kadai Chicken?

Kadai chicken is a chicken that is cooked and usually served the type of kitchen utensils called Kadai. Kadais are commonly used in Pakistani and Indian cuisine and have a number of variations of names, the most common are Kadai, Karahi and Kadhai. Other names or spelling include Karai, Kadahi, Kadhi, Karai and Karai. Strong and with a heavy rounded bottom is traditionally made of cast iron, but stainless steel, copper, brass, aluminum and enamel versions have also become popular, as well as a flat bottom version that are robust on stone in the North American style. Kadai has two loop handles, one on both sides to allow easy transport from the cooking point to where it will be served.

This type of pot is used for frying food. Its shape allows deep frying with a minimum amount of oil of any hot spraying content. This type of pot is also commonly used for fries and steamed meat, especially curry.

Kadai chicken is cooked relatively quickly and produces dry, thick, spicy red curry, which is usually consumed with Roti, Paratha, rice or bread.

The common way to make chicken Kadai is heating oil or ghei in Kadai. If the whole spice is used, the oil is added and they have been cooked shortly until they are sinking and aromatic. The chopped onion is then added and roasted until soft and golden brown. Garlic, ginger and chili are mixed with a paste, add to the pan and nSet for minutes they roam.

Capsicum is mixed and allowed to cook for a few minutes until they start softening. Chicken Kadai is then decorated with fresh coriander and served.
