What is Kruidkoek?
Kruidkoek, or Kruid Koek, is a spicy cake that works in the regional cuisine of the Netherlands. This thick cake has a similar texture and taste to gingerbread; Its name simply means "spices". This sweet delicacy can be served separately for breakfast or dessert. A sandwich between slices of bread can also be consumed.
The cake variants can be named for their origin. For example, Friese Kruidkoek originates in Friesland, a coastal region where the natives performed the Romans during attempts by ancient civilization to rule Europe. Groninger Kruidkoek, or Groninger Koek, comes from Groningen.
The basic recipe for cake depends on the customizable spice mixture, which usually includes cinnamon, clove, black pepper, nutmeg and ginger. Cinnamon tends to be the most important spices because it has a milder taste that can be overwhelmed by the heavier conditions of other spices. The exact levels can be adjusted to taste.
Dry ingredients Kruidkoek include flourU, dark brown sugar, baking powder and a mixture of spices. These ingredients are combined with molten butter and milk to form a dough of spices. A greased bakery pan is used to cook the cake for about an hour. The finished circle has a warm brown color and is firm to the touch. The cake can cool before it is sliced.
This basic recipe for a circle is open to variations depending on the preferences of taste. Dried or candied fruit or chopped nuts can be added during cooking. The northern variation of the cake called OUdewijvenko or "old Hag's cake" includes an anise seed in its spice mixture.

Kersttulband is a spicy and fruit ring cake that is served for Christmas. Oranjekoek is an orange cake with anise seed. Hollandse Stroopkoek includes Dutch syrup, beer, currants, raisins and walnuts.
