What is mescal?

mescal, or mezcal, is a type of distilled spirit made in specific areas of Mexico, where the Mexican government is strongly regulated by production. Liqueur can only be made in a number of Mexican states, using only certain types of Agave varieties and cannot be mixed with any other spirit. The state of Oaxaca usually produces most mescal for the country. This drink is available outside Mexico and can grow in popularity, as more people discover. A number of different varieties of agave are used to create different types of liqueur. Tequila is a specific type of mescal made of Blue Agave plant in Jalisco. All tequilas are mescal, but not all mescalas are tequila. When Spanish attacked the country at the beginning of the 15th century, they brought the arts of them. Before the Spanish landing, people fermented the sap of Maguey race to make a drink known as Pulque. Pulque was used to calm the sacrificial victims, given by the priests to help them prepare for rituals and used as a medicine. Once they learned how to distill, they startedNative Aztecs to create a mescal from Agave sap.

usually takes several years of production of mescal because the Maguey plant lasts up to 15 years. When the agave plant matures, the heart, also known as the Pina, is removed from the plant. The PIN is crushed and chopped and usually placed over the hot rocks in a deep pit. Hearts are usually covered with leaves of bananas or palms and then the soil. They are left in the fireplace to bake for several days. In some cases, the heart can bake up to a month.

Once the heart is baked, they are ground and left to fermentutanene or more. Water is added to the mixture before Maquey is placed. The Maquey mixture is then distilled to the day when Mescal becomes. In general, the process of producing this spirit remained the same since the region was introduced on distillation in 1500s.
