What is Morbier cheese?

Morbier Cheese is a French cheese that is made of cow's milk and is semi -free. It has a distinctive appearance because it has two layers, separated by a layer of edible ash. The name for Morbier cheese comes from a village in which his invention is attributed, Morbier in the eastern French province of Franche-Comté.

People who first made Morbier cheese failed to sell. Instead, it was a farmer's cheese, often made for personal consumption and as a way to seek the economy. The earliest versions of the cheese were made of residual cheese curd. Cheese manufacturers also made cheese as they used the remaining milk, but usually there was not enough milk to fill the full wheel. An interesting take -off on Morbier cheese is American cheese Mobay. This Wisconsin cheese is not made of cow's milk. Instead, the mobaypolocomic cheese made of goat's milk layer and one of the sheep's milk is made. In appearance it is similar to Morbier, with ashes separating both layers. However, the taste is significantly different, because goats and sheep milk differ significantly in taste and tend to produce sharper cheeses.
