What is the tea pekoe?

PEKOE Tea is a gentle degree of tea that includes young tea leaves and buds. When tea is well treated and cooked, tea has a rich aroma similar to forests with a touch of bitterness and a sweet surface. Pekoe has long been valued as one of the best teas and has always been a popular Chinese export. Most markets carry PEKOE and are usually available from shops that specialize in tea. It is a reference to fine white hairs that appear on firmly upset young tea buds when they are harvested to make Pekoe tea. The individual leaves of PEKOE tend to be somewhat small and gentle and develop in hot water. Like many black teas, PEKOE is best if it can be obtained freely. Free tea contains only buds and leaves and does not include stems and fannings from the sorting process.
