What is PICI?

PICI is a type of pasta popular in Tuscany, located in Central Italy. Like spaghetti, PICI is stronger, roughly textured and irregularly shaped than conventional household pasta, to which it resembles similarity. Although it is usually easy to find in Tuscany and other regions of Italy, it is difficult to find them in other countries, especially in the United States. Piici goes under the name stringozzi in Umbria, also located in Central Italy.

In order to manually create the PICE, a mixture of flour is often used. Smolina or Farro flour mixed with college flour is usually what is designed, although different recipes advise different variations. Some recipes even propose to use only versatile flour. Sometimes olive oil, salt and eggs can be added to the dough, but only flour and water are often used to make pasta. However, adding olive oil to the dough helps to prevent breaking during rolling, so chefs who often have a problem with breaking the dough, which contains OLej. When the eggs are included, they are mixed into the dough after a second. The mixture is then kneaded until it gets rid of. As soon as it is mixed thoroughly, it is covered and allowed to rest for about an hour. It can also be placed in the refrigerator and maintained for up to one day.

After resting pasta, it first rolls into thin leaves and then the leaves are cut into long strips. Strips that work on a floured surface are manually rolled into the cylinders. Pieces that are not rolled are covered to prevent drying. PICI is a good pasta for beginning pasta manufacturers because it is designed to have a strong, irregular shape, so uniform and accuracy are not essential. The noodles can be of different lengths, but generally would have about 8 inches (20 cm) long. Noodles should not exceed 18 inches (45.7 cm).

As soon as the noodles are finished, they should be placed in salted water and then cooked for a few minutes. When the noodles begin to float on the growlHol, they should be cooked for no more than a minute more and then removed from the water. Like spaghetti, meat sauce is a traditional watering for PICE. Herb sauces also complement this pasta well.
