What is uunijuusto?
Unnijussto is a traditional roast cheese from Finland; It is not technically cheese, but a close equivalent. These types of cheeses are made of Coostrum, the first nutrient -rich milk that the cow produces right after giving birth. The colostrum milk contains a large amount of albumin, a substance that helps the milk naturally to coagulate and create uunijuusto cheese. On the other hand, regular cheeses consist of a strengthening of milk either by a rennet, an enzyme found in the inner stomach lining of young mammals or a vegetarian microbial coagulant.
Many traditional Finnish cheeses and other dairy products are produced using a colostrum. The use of Rennet in the production of cheeses was considered a cruel practice and was historically prohibited in Finland; As already mentioned, Rennet for the production of cheeses, depending on the type of cheese, is obtained from stomachs of unwilling calves, children and lambs. If Coloskurrum's milk is not available, it is possible to produce unnijuusto cheeses with conventional milk and eggs. In this case, eggs work as a coagulantand help transform common milk into cheese.
The best uunijuusto of Finnish cheeses are those that are prepared using a colostrum. Fresh colostrum is preferable, but it is also possible to use a frozen colostrum to produce cheese. At first there is no need to melt the colostrum, as it can be inserted directly into the oven and baked as it is. A pinch of salt is added to the milk before baking and sugar and cinnamon can also be added.
The colostrum milk is then baked in the oven for about half an hour at a high temperature. Baking milk gives uunijuusto cheese a characteristic yellowish color. As is the case, it is possible to control colostrum milk coagulation. For example, if the cheese manifests too hard, it can be softened by adding amal milk to it, while if the cheese is too soft, it can be stiffen by adding whipping whites.
In Finland, there are various regional ways to serve and eat uunijuusto cheeses.
