What is ying de hong?

Ying de Hong is a number of Chinese black tea from Yingde in the modern province of Guangdong. Other tea names, known as Yingde Hongcha, include Ying de Black, Ying Hong and Guangdong Black. Tea when dry appears as a bundle of wavy and dried black tea leaves that smell like cocoa. When the leaves are infunded, it turns water of amber color and cooking has a pepper taste with a touch of sweetness at the end. China has a rich history of tea. Chinese legends believe that the tea was first introduced to the Shennong region in 2737 BC. It seems that Ying de Hong has a much shorter history. While tea could have been a family recipe for much longer, the brand and style became popular in Yingde in 1959. This year the tea was first produced using machine and factory processes.

One source of variation is the type of tea sheet used to produce Ying de Hong. The types of leaves include Feng Huang and Yunnan Big Leaf.

Despite different methods of preparation, there are four basic steps in creating Ying de Hong. First, the leaves can be allowed to dry, then they are rolled, fermented and fired. Traditional rolling occurs when the leaf is flexible enough to be rolled without its distribution. The latter method is used for top varieties because production takes longer.

ying de hong can be available in local supermarkets. If you cannot find them there, they can be found in specialized tea retailers, imported shops and Chinese supermarkets. An alternative place for shoppers to find black tea would be to use specialized online retailers and importers.
