What are veal sweeterads?

Type of criminals, veal sweeterads are an early gland or abdominal calves. After soaking the sweetbread is blanched. On the blank, the organ is located in boiling water and is left to cook on a short time. After cooking, the meat is transferred to the ice bath to stop the cooking process. Blanching allows Sweetbread to partially cook before it is included in the bowl.
