What is Popiah?
Popiah is a food from southern China, which is consumed in many countries of Southeast Asia. It is similar to spring roles, except that it usually has a much longer list of ingredients and is closed in a special crepe cover. Popiah usually contains shredded or Julian vegetables, including turnip, carrots, jicima and cabbage, although many others are often used. The meat is sometimes included, specifically pork abdomen, chicken or even seafood, such as shrimp. The cover is produced in a special way to ensure that it is very thin, and is often covered with a sweet sauce or chili before filling and chilli. There are Popiah parties during which all ingredients and sauces are spread, in the style of buffet, so that guests can choose when they assemble their own roles. The ingredients are generally divided into three sections: vegetables, meat and sauces and spices. The types of fillings vary depending on the taste, but Popiah is most often sold in food stalls generally contains mostly carrots, turnouts andpork.
One of the unique parts of Popiah production is to create packaging or leather. It starts with a dough made of flour - sometimes rice flour or wheat flour - and mixed with water until a very free and wet dough is formed. This dough is repeatedly lifted and slapped on the counter until long ropes start to form.
Thepart of the dough is taken in your hand and rolled quickly through a hot pan or other cooking surface. In this way, only a thin layer of dough captures on the heated area and leaves the rest of the dough uncooked. The thin pancake is cooked quickly and removed from the heat, after which the process repeats until all the dough changes to a thin crepe.
Typical vegetable fillings for Popiah include cabbage, turnip, carrots, tofu, green beans and bamboo shoots. Are shredded or cut into very thin strips. They can be fried, steamed or blanched. It is traditional to use mainly vegetables whoRá is fresh and in the season.
The type of meat used can be almost anything or meat can be completely excluded. The pork belly that is cooked and then shredded is a common filling. Shrimp, chicken, Chinese sausage and beef can also be used. The meat is not generally spicy, with the exception of some salt.
Popiah assembly begins with the skin. Any sauces such as chili sauce or hoisin sauce are teaspoon for wrap and are covered with a leaf of salad that helps to hold the ingredients. The filling is located inside the leaf of the salad and spilled with the required flavors such as fried garlic or boiled eggs. It is then rolled firmly and is ready to eat.
