What is Espasol?

Sweet Philippine dessert, espasol is a type of tubular rice cake. Espasol comes from the province of Laguna in the Philippines and is usually made of two different types of flour and also has a strong coconut base. In addition to being a home treatment, it is also a popular seller in the Philippines.

This bowl includes sweet rice flour. In addition to flour, coconut milk, sugar and grated coconut are also included. Sometimes salt, anise seeds or vanilla essence are also added. Flour and coconut are placed in separate pans and heated on low flame. The chef mixes every component until it relieves light brown. Sometimes sweet rice flour will also be roasted.

Once the toasted ingredients are earmarked, coconut milk is cooked. Some versions cook sugar with milk and are waiting to add sugar until the milk is cooked. Either way, the sugar is dissolved and the mixture is left to thicken before the inclusion of other ingredients.

Then the roasted coconut is added to the milk mixture. Once the coconut is combined, vanilla seeds, salt or anise, and the toasted flour mixes into the mixture. Espasol can cook for up to an hour until it thickens. The cook must continue to mix the mixture often during the cooking process.

Sometimes only sweet rice flour is used. In this case, the flour is toasted and then divided for use as an external coating and a cooked component. Otherwise, the cooking process remains the same. Regardless of the process, as soon as the mixture thickens sufficientity, the pan is removed from the heat and Espasol is allowed to cool. Meanwhile, the flat surface is dusted with tinged flour.

When the mixture is cool, it is divided and the pieces are rolled into tubes on a floured surface. The mixture can be divided into several small pieces or can only be divided into two. If it is divided, each longer tube will be cut into pieces of size after the cylinder. Usually each Espasol has about 0.5 inches (1.27 cm). Although EspasolIt can be administered on a plate, often served wrapped in leaves of paper or bananas.
