What is Barbacoa?

Barbacoa is a type of cooking in both Mexican and Caribbean kitchen and a link to a specific type of bowl cooked in this particular style. Sometimes there is a misconception that Barbacoa is actually just another word for the grill, but it is not. Authentic Barbacoa preparation involves cooking meat in the pit in the ground along with water container, causing heat that the meat is very moist and causes the meat to be moist. The most cooked food, which is truly barbacoa, is the head of the cow, slightly spicy and cooked all - with eyes, faces and tongue - for hours until it is tender and the fat just began to portray. In some areas, the meat used is more traditional instead of a cow's head, such as pork or beef cut.

The cooking method used in the production of Barbacoa begins with a pit, which was dug several feet deep into the ground. Depending on how the pit has been arranged, it can be checked every few hours to ensure that the liquid in the pot has not completely dried up and more added as needed.

The finished Barbacoa is removed from the grill, unpacked and pulled the bones into crushed pieces. Meat is most often consumed by ZABAlouno to tortillas like taco or served on rice. Sauces such as chili sauce or salsa are also also served. The cooking method can be imitated on standard grills by including a pan full of water while cooking and maintaining a lid closed throughout the process.
