What is the bean paste?

Bean paste or bean sauce differs in color, texture and composition and is a popular ingredient in many meals in Asian cuisine. Some common varieties include miso and red, yellow, brown and black bean pastes.

miso

MISO is a thick paste made of soybeans and grain, such as barley or rice, fermented with yeast mold. This mixture is combined with salt and water and ages for months or even years. Shiro, or white, Miso is on the sweeter side, while aka or red, miso tends to be stronger and salty. Miso is added to soups, broth, sauces, marinades and bandages as an aroma.

red

red beans paste is made of cooked Adzuki beans and is sweetened with sugar or honey. The paste can be smooth or may contain pieces of beans for texture. It is used in Chinese, Japanese and Korekuchyně, especially for dessert objects such as cakes, pancakes, monthly cakes, sticky rice balls and sweet soups.

Yellow

yellow beans have a similar texture to the red type. It is made of cooked, de-hulled mung beans that are sweetened and porridge. This type of paste is commonly made of ice cream and other dessert items, such as the filling for monthly cakes.

The term yellow bean paste is also sometimes used as a synonym for salty yellow -brown soy sauce, which is supplied in a bottle and is used as a spice.

brown

Paste or sauce of brown beans is made of fermented soybeans, water, salt and flour. It can be thick or thin, smooth or robust. It can be flavored with garlic, chili or other spices. It is generally used to flavor fries, vegetables and tofu dishes, as well as pork, ducks and fish.

black

Paste or black bean sauce is Made from Salty, fermented black beans. Used as a spice or cooking sauce and can be an OCHucena spicy chile with paste or garlic.

Although bean pastes and beans are available in cans and glasses from Asian foods and some large supermarkets, some chefs prefer their own preparation. If you buy a bean sauce in a can, transfer it to the container as soon as you open it. Stored in a glass will keep in the fridge indefinitely.
