What is a bread sauce?
Bread sauce is a food that has its roots in medieval British cooking. The sauce is traditionally served with Christmas meals in Britain, although it accompanies many poultry meals well. Bread sauce consists of milk or cream, onion, spices, musty bread and butter. It could be served warm or cold, but many people prefer warm turkeys or chicken, next to potatoes and sauce. Many people enjoy cooking the scent of bread sauce, caused by onion and spices that are cooked in milk, almost as well as the taste of the finished product. The bread sauce was created as a spicy sauce that accompanied many meals and used any remaining bread. This sauce is one of the only spicy sauces and meals using bread as a predominant ingredient found in modern British cooking. Bread is often used in sweet puddings such as pudding bread or summer pudding.

The Turkish variant of bread sauce includes a sauce made of breadcrumbs to which ground walnuts, chicken and chickpeas are added. This salad, known as Circassian Salad, can also be made of a duck or pheasant. Instead of using milk to moisten bread and creating the sauce uses circassian salad broth of poultry cooking.
