What is Catupiry®?

Catupiry® is a brand of soft cheese made in Brazil. Although it is not easy to find this cheese outside Brazil, a limited amount is exported to some countries. The cheese has a slight taste and is commonly used as a component in salty and sweet foods. The name comes from the word in one of Brazil's native languages ​​and means perfection.

Catupiry® taste is similar and slightly stronger than the taste of cream cheese. It is made of cow's milk, which has been mixed with sour cream, salt and cheese cultures, although their exact proportions are the mystery of society. Cheese cultures, including milk ferment and a mixture of bacteria, transform liquid milk into cheese and give it part of its taste.

In terms of texture, Catupiry® is creamy and very soft cheese. It is easy to spread and is not strong enough to cut effectively. This texture makes Catupiry® useful as spreading cheese and as an ingredient in a number of meals.

CATUPIRY® creation is similar to the process of producing many other types of cheese. Fresh milko is gathered from the dairy farm, pasteurized to kill undesirable microorganisms, and then homogenized to avoid the separation of cream as cheese ferments. Cheese cultures are then added to the milk, the sour cream is mixed and the mixture is left to sit until the bacteria transform fresh dairy products into cheese.

In 1911, Mario Silvestrini, an Italian immigrant to Brazil, founded the company produced by Catupiry®. The cheese has become popular for the first time in personal cooking and later in restaurants. It is a versatility that has allowed it to integrate into many different recipes, often as an alternative to cream cheese or sour cream. The cheese is usually wrapped in round containers that were made of wood when the company was first established. Now, Catupiry® can also be purchased in plastic bags or pipe bags.
