What is dopiaza?

dopiaza is an Indian meal made mainly of onion, which is prepared and added to a bowl in two separate batches. There is usually some kind of meat in a bowl, most often chicken, although goats, lamb or beef can also be used, as well as the edges for vegetarian preparation. The food also contains a large amount of chili peppers, giving it a very spicy heat that develops, because the ingredients are frying first, then cooked in the water and eventually reduced to a strong paste that covers the ingredients. Although the word "dopiaza" is used to indicate a fully prepared food, it can also be used specifically to indicate only onion sauce, which can also be used in other recipes.

The most unique aspect of the Dopiaze is that a large amount of onion is added at two different points in the cooking process, each dose of onion is ready differently, creating a layer. OneFrom the common ways to achieve this, it is very rough to chop half the onion and the other half very gently. The coarse onion is cooked only in a pan until they are translucent, while the finely chopped onion fry until caramelized and brown. Another method includes mowing some onions and frying to translucent, while the other half is placed in a kitchen robot and disintegrates until it creates a paste that is fried until golden brown. The more robust version of the dopiazy can be made by cooking one large dose of onions with any meat and then at the very end, sprinkling raw, sliced onions at the top.

One way to produce dopiaz is first to fry some of the chopped onions until they are gold and caramelized, and once remove them from the pelvis. Furthermore, another dose of onion along with spices such as cumin and coriander is added to the pan. The onion is only fried to a translucent, after which the meat is added to the bowl and allows Brown from outside. Chopped chili peppers are locatedIn a pan together with a caramelized onion, followed by enough water or supplies just to cover everything.

The liquid in the dopiase is reduced until it is very strong and adheres to all ingredients. The finished bowl can be decorated with fresh coriander at the top and served through rice, especially if a large amount of chili peppers was used. Some recipes also chopped raw onions, accompanied by fresh lime juice, sprinkled over the top.
