What is Escudella?

Escudella I Carn d'lla is a traditional abundant goulash of meat and vegetables from the Catalan region of Spain and neighboring countries of Andorra. Escudella is originally served as food on rural farms and is now part of a traditional Christmas dinner in the region. This goulash is also a national meal of Andorra.

Traditional Escudell recipes differ, but all include several different types of meat and vegetables. Most versions also have chickpeas or white beans and rice or pasta. The steamed meat always includes homemade broth in which all ingredients are cooked.

The broth for steamed meat is usually produced using bone pieces of meat-running components include chicken, pig and sheep legs, veal or beef bones of marrow, ham or lamb hock and possibly whole chicken. The pieces of meat are cooked in water for one or two to form a broth. Then the bones are removed and the broth is tense. Any meat from ham, lamb Shank or Chicken Carcass is removed from the bones and returns to the broth.

eScudella traditionally includes pilot , which is one or two large meatballs made of ground pork or sausage. Meat balls are usually spiced with garlic, parsley and sometimes pepper and cinnamon. After removal of the bones, it is cooked in the broth.

vegetables are added to the broth along with pilot . Common vegetables include potatoes, cabbage, turnip and carrots. Onion or Swiss mangard can also be used. Steamed meat may include only two or three of these vegetables or all of them. Rice or pasta is also added at the moment. Once the vegetables are added, the steamed meat immerses until the meat balls and all the vegetables are cooked.

Escudella can be served together as a stew, but it is traditional to separate the bowl into two courses. The broth is a tense and served with rice or pasta as a first course soup, then meat and vegetables are served as hlAvních. When it is served at Christmas dinner, Escudella is generally the first course followed by the main meal.

In the beginning of January, the Escudelly festival takes place on St. Anthony's Day. In many parts of Andorra, free escudella, bread and wine are served. In the parish of Sant Julia de Loria, this festival is also celebrated on St. Sebastian's Day.
