What is Machaca?
Machaca is a mexican meal consisting of marinated shredded beef. Beef in Machac was traditionally dried after it was cooked and created beef jerky. However, more modern versions do not dry beef. Instead, the meat is placed in tortillas or taco shells or served with salsa, guacamole or mixed eggs. Machaca can often be found in Mexican restaurants, but usually seen under the simple name of shredded beef. Other spices such as cumin may also be included in the marinade. Instead of fresh garlic or chillia, garlic and chili powder can be used. Salt and pepper are also usually included in the marinade. Chuck, subprime meat, is generally a dull choice than many other cuts. Only after the meat has been cooked, it is shredded, but roast is cut into pieces, usually about Quarter Libra each (113 g) than marinated. In order to create Machaca, marinade ingredients are combined and the cut beef is placed in the liquid overnight. After marinating, beef is released and left to sit until it warms up to room temperature. Then the meat is brown in oil and put aside. Onions, garlic and spices are fried and tomatoes, chili and broth are added. After the mixture has cooked briefly, beef is included and can cook up to two hours.
Once the cooking is complete, the meat should be fine enough to tear the fork and crush. Some versions return the shreddedef to the pan and continue cooking Machac until the liquid is almost removed. When the bowl is complete, the taste of salt and pepper is flavored.
Several versions of Machac will skip the marinating step. Instead is meat and themwhich spices cooked in water for more than an hour. Then the meat cools down and the broth is reserved. The other ingredients are then fried before the meat returns to the pan. The reserved broth is mixed at the end of the cooking process.
