What is a rebus?
Mee Rebus is a food found in Malaysia that contains egg noodles covered with sauce that has been reinforced by potatoes. The sauce is sweet and spicy with moderate acidity. The food has a number of ornaments, including lime, canic, beans and eggs from a solid abdomen. Although the origin is uncertain, some believe that it was first created in the northern areas of Malaysia and then brought Indian traders south. In other countries in the region, there are differences in Mee Rebus, some of which are very different in certain respects. Finally, street sellers started selling food from two pots they carried. If someone wanted it, they would make it a rebus to order. Over time, few street retailers have moved to restaurants in Singapore, who is growing popular. These are fast blanched to cook them. The noodles are also used in other Malaysian dishes such as Hokkien Mee in which they are fried instead of blanched.
The sauce that dresses egg noodles is made of beef, shallots, turmeric, coriander and peanuts. It is thickened by crushed potatoes and release their starches. Sweet potatoes were originally used to thicken the sauce, but any type of potato could be used in modern kitchens.
Once the noodles and the sauce are combined, the food is decorated. Mee Rebus has a wide range of ornaments. The board is decorated with limens, fried tofu, key beans, chili and shallots. It is also traditional to place shrimp or octopus on a plate. All this can be arranged around the outside of the noodles or mixed with the sauce.
In Indonesia, there is a variation called mee jawa , which is similar and different from the Rebus Mee. It is basically a soup made of egg noodles. It contains no potatoes and the sauce is not thickened. It includes various elements such as tomatoes, shrimp, fish balls and cabbage, but keeps a wide selection of ornaments from the rebus. The taste of mee jawa is significantly different, but jen j by jídla shares some basic elements with Mee Rebus.
