What is oncom?
oncom is a food that is usually produced and consumed in western Java. It is a fermented block or a leaf made of pulp nuts, beans and other foods that have been exposed to a certain type of spore and left to ferment for one whole day. There are two main types of ONCOM, black and red, and the difference sometimes occurs with the cultures used and sometimes they are a sign of the type of pulp used. Many meals can be made of ONCOM and is very common to find it on thin pieces and fried to make refreshments called semolina or wrap in banana leaves and roast to create variations of food known as pepes . Once the pulp is fully inoculated, it can be allowed to ferment for a longer period of time to create other meals such as dage .
The material used to produce oncom is a pulp of various foods that remain after processing their liquids. The most common types of pulp, also called presprocation are soy, peanuts,Coconut and Kasava. Each gives a slightly different texture and taste. Most often, black oncom is made of peanut pulp and has a softer texture than other types. The pulp used can be collected from industrial processing plants, or it can be made by cooking raw ingredients, solids of solids and grinding.
The oncom production process begins with my pulp washing. After washing it is strictly dried to prevent the rooting of harmful molds and bacteria on the pulp. In some cases, the pulp is cooked to soften the texture or mix with vinegar to sterilize the surface. Dry pulp is arranged in a wide, flat shape and then covered with used disputes.
Unlike similar products as tempeh , disputes are only located on the outside of ONCOM. Inoculated pulp is located on a shady, permanently warm place for 24 hours, during thisthe time on the surface of the pulp develops the form; The pulp is very warm and begins to deal with a denser texture. After completing the period of 24 hours, the form will be penetrated into the pulp, which means that it is ready for consumption.
As food, OnCom has a distinctive fermented taste. It is often encountered in thin pieces that are fried and consumed as refreshments similar to potato chips. Food can also be decomposed and fry or baked and add as a protein without meat in rice or soup. When wrapped in banana leaves and flavored with garlic, it becomes a form of pepes.
