What is Peach Melba?
Peach Melba is a famous dessert, a long classic in Europe and many other parts of the world is very pleased. This mixture of peaches and raspberries in the sauce above Vanilla ice cream was created at the beginning of the 90s. The 20th century Auguste Escoffier when he worked at the London Hotel Savoy. The name comes from Dame Nellie Melba, who was one of the most famous opera singers at the time. Through the dessert of Escoffier, he was looking for a way for Dame Melba to eat ice cream, something she loved, but feared she couldn't eat because it would harm her singing. He referred to the performance of Dame Melba at Wagner Opera Lohengrin , to which Melba invited Escoffier. The opera was part of the knight of the tradition of Swan and based on medieval stories, where the knight arrives on the swan ship. Escoffier loved the swan ship used in the opera and prepared the first Peche au Cygne with Aswan Ice Sculpture.
Later, as some accounts go, ESCOFFIER reimaginated dessert when he went to work at the Ritz Carlton Hotel and added raspberries to the BrOzkví, renamed the dessert to the peach Melba, so no one forgets his inspiration. It was this recipe that became the most famous and was most published in later cookbooks. This improved version, because ESCOFFIER caused it to be really simple.
Most Peach Melba recipes invite you to blanch a blanch peach and remove their skin. If the peaches are very ripe, the blanish step may be unnecessary and removing the skin on ripe peaches is easy. The peeled and sliced peaches are sprinkled with granulated sugar and are allowed to macerate and cool. The raspberries in the Escoffier recipe were crushed and then tense, but this step is now much easier with a kitchen robot or blender to turn raspberries into a fine sauce. The sauce will be a little cold and should be reinforced with powder sugar. ESCOFFIER recommended the stress of crushed berries to remove the seeds and canEte it if you don't care about the seeds and want a smoother sauce.
When peaches and raspberries are cooled, ice cream is placed in a bowl, bowl or cup and peaches are layered at the top. Furthermore, raspberry sauce for peaches and ice cream was poured to create beautiful cups such as confectionery that bursts with fresh taste. However, you do not have to wait for these fruits to be in the season if you can freeze them. Certainly you can use frozen peaches and frozen raspberries, or even mixed berries to create a passable peach melba in every season, although some people say that the best peach rendering always uses fresh fruit.
