What is piloncillo?

Piloncillo is a form of Mexican sugar that has a dark brown color. It is known for its strong molasses, although it comes from sugar, which is relatively unrefined, rather than adding molasses to sugar. In most recipes, Piloncillo can be replaced by dark brown sugar. It is especially good in recipes where a strong molasses flavor, for example in gingerbread, is desirable, but in Mexico it is also the primary sugar used in many drinks and classic desserts such as Flan.
