What is Sekihan?

Many countries, eastern and west, have a traditional recipe for red beans and rice with mild changes in everyone. In Japan, food is trying to strengthen rice with beans. This bowl is known as Sekihan , literally means "red rice", is ready in a pot with white rice and red beans, complemented by several spices to prevent it from being tasted.

Native Japanese legumes are commonly used to produce Sekihan , which also passes through the name Osekihan . The primary component is called the bean red azuki , which is used in many Japanese recipes, especially as a paste of red beans called and . Suitable substitutes are other western varieties such as kidneys and red Mexican beans.

Beans are just one main component Sekihan . Many cooks use either sticky or endless variety of white rice. Some use a combination like one recipe that requires four parts sticky for one part of non -sticky ricethat. About six parts of rice are used for about one part of beans, which should hit the rice with a dark pink or light red shade.

For preparation Sekihan , rice is first cleaned in several series of water soaking. Once the water renders, rice is often left to soak for several hours. The beans are cleaned and cooked in the water and then the rice is added along with some salt. As soon as the boil returns, the heat is reduced and the pot is covered until the rice and the beans are fine.

popular Japanese spices for completing Sekihan is called gomashio . This is a salt mixed with some toasted sesame seeds that are liberally sprinkled over the finished product. These are the only necessary spices. However, some chefs add another Azuki paste or even a red food color to the pot, while the bowl cooks to intensify the color.
