What is Untapam?
sometimes written as uttappa , uttapam is a type of flat bread originating from southern India. Similarly, in creation as crepe-like dosa , the dough is made of rice and lens and then allowed to ferment. However, Untapam is stronger than DOSA and is often made from chopped vegetables.
Uttapam dough is made of approximately two parts of rice, often basmati and one part of black or white gram, the type of lens. Both are ground, either by hand or use a kitchen robot, and then salt, sugar and baking soda can be added before the mixture leaves the fermet for 4 to 15 hours. Fermentation is evident by a change in the texture and the growing dough level in the bowl. Properly made dough will be strong but running.
As soon as the dough is ready, poured on the grid or pan as pancakes. Generally, each is about 4 inches (10 cm) across. The spoon can be used to spread and even dough on the grate. However, the uttapam should be relatively strong, so spread the dough pThe thin thin will lead to poorly made bread. It is not limited to have a taste and eliminate the need for a large grinding. It is recommended to ratio of two parts of rice flour to one part of the urid flour.
When cooking Uttap, chopped vegetables are placed on each piece. Onions and tomatoes are the most common vegetables used, but sometimes chily, corn or carrots are also included. Spices, such as cilantro, can also be added.
During cooking, olive oil sprinkled over the edges of flat bread and vegetables. Uttapam is allowed to boil until the surface bubbles, and then each piece flips to allow cooking on the other side. Alternatively, bread can be grilled for one or two minutes after it starts to bubble. If it is desirable, the salt can be added to the finished bowl for taste.
Uttapam is often served with sambhar , lentils also dating in southern India. In addition to the lens contains sambhar cIbuli, coconut and eggplant, as well as some spices that are common to Indian food such as curry, turmeric and tamarind pulp. Simple coconut chutney can also be paired with Untapam.
