What is Gordita?

Gordita is a flat bread made of corn flour, originally from Mexico. They are relatively strong, usually the size of the hand, and can be divided and filled with various fillings, from cheeses to beans to meat or steamed meat or combinations, usually with chili. Gordita means "small fat" in Spanish and is often used as a term of perseverance.

As with any regional kitchen, the size, method of production and cooking techniques differ from region to region in Mexico.
