What is Bulgarian yogurt?

Bulgarian yogurt, called Kiselo Mlyako in Bulgaria, is a type of yogurt that consists of two specific types of starter bacteria. Although the process of creating Bulgarian yogurt is identical to the process of creating other yoghurts, it is unique due to exclusive inclusion of only two different cultures. Yogurt is also not traditionally made of cow's milk, but instead uses sheep milk, buffalo milk or goat's milk. Some believe that the Bulgarian variety of yogurt has exceptional health benefits that would allow someone to live a longer life. Cultures used in Bulgarian yoghurt are not exclusive to Earth and yoghurt can be produced anywhere.

For thousands of years, Bulgarian yogurt has been made and consumed. Two types of starter bacteria, which make the Bulgarian, are Lactobacillus Delbrueckii, Bulgaricus subspecies and Streptococcus salivarius, the thermophilus subspecies. Most yoghurts produced around the world have these two bacteria, but the difference with Bulgarian yogurt lies in TThey are the only two appetizers used. Some Bulgarians believe that cultures in a country used to produce new yoghurt are actually the same that have been used for generations.

Bulgarian yogurt was originally made of sheep milk. Over time, it was made with many other kinds of milk, including cow, buffalo and goats. Each of the different types of milk has different properties and can generate different yogurt textures
