What is Butterscotch Candy?

Butterscotch Candy is a confectionery made with brown sugar and butter, including ingredients. The term "Butterscotch" dates back to 1817, when Samuel Parkinson of Doncaster, Yorkshire Town in England, first described the candies in writing. Modern Butterscotch candy can be either hard or soft. Some confectioners even convert Butterscotch into baking chips for use in sauces and pastries. The term "Scottish" once meant "cut or score". The original Butterscotch candy was a hard, fragile confectionery and confectioners needed to cut off the candies before it stiffened. Many of them therefore believe that the "Scottish" in the name of the candies refers to the knife scoring process before the cooling and hardening process. Alternatively, some believe that the "Scottish" was taken from the word "scorch", referring to the process of burning sugar that gives the candy butterscotchje a distinctive taste. The confectionery begins with a combination of brown sugar and corn syrup in the pot. This mixture is boiled until it offers a deep gold color and reaches 300 degrees Fahrenheit (about 149 degrees Celsius), known as the "Stage of Hard Cracks". Heating of liquid candies to this temperature is caused by hard, fragile butter. For softer candies Butterscotch, confectioners warms the mixture only to 270 degrees Fahrenheit (about 132 degrees Celsius), WHICH is known as the Stage Crack Stage.
