What is dirty rice?
Cajun food, the spicy cuisine so popular in Louisiana and along the coast of the Mexican Gulf, has its origin in what less rich people used when they were called academics instead of Cajun. Dirty rice can be served with the salad as the main meal, depending on the amount of meat or to perform Jambalaya or Gumbo.
