What is the Struzzassa?
Strustet, or priest Choker, is a hand -rolled Italian variety of pasta with origin in the areas of Romagna and Tuscany. Strash, made of plain pasta dough, is formed by rolling small rectangles of flat dough into tight coils reminiscent of scarf or towel. The dough used to make pasta is generally standard undeveloped flour, water and salt, which may include eggs depending on the chef. The sthubers are usually served with a ragout for meat or tomato -based sauce. The name is also sometimes used to describe Gnocchi, ie traditional Italian dumplings of cheeses and ricotta.

Some believe it concerns a delicate nature of pasta, which could even cause priests to worship to the suffocation. Whether its origin, the name stuck and SPOlo with other forms of clutches or hand -rolled pasta remains very popular. The pasta is either fresh or available dried and boiled in boiling water with a little salt and oil until al dente or just soft.
Traditional dough used to produce Stroozapreti is a simple pasta base consisting of wheat flour, water and salt. Some chefs include parmesan cheese or 2 eggs for a cup of flour, but they are optional. After creation, the dough is introduced to the desired thickness and then cut to the strips about 1 inch (2.5 cm) wide. These strips then roll between the palms until they create a tight spiral reminiscent of a rolled towel or scarf. The spiral strips are cut or clamped to a length of 4 inches (10 cm) to form characteristic pieces of stubbing of the pasta.
