What is Menma?
Menma is a slightly sweet and salty spices of boiled bamboo shoots that are cooked in soy sauce, water and brown sugar. It is generally used as a topping for soup, especially shoulders, which are almost ubiquitous spices in Japanese cooking. Menma is generally made of dried slice of fermented bamboo shoots, but some chefs make a version of fresh or canned bamboo slices. It can also be called shinachik.
