What is paomo?
also called yangra paomo , paomo is a type of mutton soup that is paired with flat bread. This soup, famous in Xi'an in northern China, can be found in local restaurants and many larger chains in the region. paomo is a cheap yet strong and fleshy dish of Arabic influence.
Either lamb or mutton, meat from fully grown sheep, is used in paomo . The meat is washed before cooking. Then it's often steamed. Meat tracking includes briefly frying before it includes it in the soup or goulash, where it completes cooking. In the soup they are usually included in the soup of mutton or lamb bones, but instead of beef bones could be included. Sometimes caraway, coriander, hot peppers and green onions are also included. Salt and pepper are generally added to taste. Pickled clove of garlic, pepper pepper or coriander is often set for decoration.

to create paomo , bones, meat and most spices are placed in a pot of water. The soup is then heated and leaves for up to four hours. Bones, as well as herbs and vegetables, are discarded when the soup is made so that only meat and broth remain.
To remove spices, the broth can be either tense or can be packed into a muslin fabric before placing in the soup. The association of spices makes it easier to pull them out when the soup is finished. Salt, pepper and cumin are added to the completed broth when used.
For administration, the bread breaks into small pieces and placed in a bowl. In restaurants, dinner is usually served a whole piece of bread and let it crumble. Pieces of bread should be very small, only pea sizes because the broth absorb and significantlywill be expanded. After the bread breaks down, the broth is poured into the bowl along with pieces of lamb or mutton. Pickled garlic is the most common bay for this soup and can be combined with sauce on pepper sauce or coriander.
