What is Pinole?

Pinole is a type of toasted corn, which is the basic meal of some Mexican Indian tribes. Pinole is considered energy food. Easily made at home, this ground corn can be added to other spices and different amounts of water to form a drink, oatmeal or dried cakes. The Tarahumara Indians are considered to be some of the most athletic groups of people ever known, running up to 100 miles without stopping. Pinole is often carried with them during these runs and can be consumed during movement or fires in the camp.
